First, wash and finely shred the cabbage and onion. In a bowl, crack 3-4 eggs and whisk them thoroughly with 1/2 tsp salt and 1/2 tsp black pepper until smooth. Add the shredded cabbage and onion to the beaten eggs and mix well to create the egg and vegetable mixture.

Melt 3 tablespoons of margarine or butter in a pan over medium-low heat. The key to authentic street toast is the rich, buttery flavor of margarine, so don’t be shy to use it for that classic taste!
