Main Ingredients- 1 medium potato

Step 1
Prepare one medium-sized potato. Cut it in half and use a peeler to thinly shave off the skin. This method allows you to create much thinner potato strands than using a knife, resulting in a crispier pancake. One potato makes about a single serving of this potato pancake. Feel free to use more potatoes if you wish.
Step 2
After peeling the potato with a peeler, rinse it under running water to remove excess starch. This step is key to achieving a crispier texture in your finished pancake.

To the peeled potato, add 1 tablespoon of tempura powder, 2 pinches of salt, and a pinch of black pepper to your liking. Mix everything together until the potato strands are evenly coated. The tempura powder will help absorb moisture, contributing to a crispier result.

Pour 1 tablespoon of cooking oil into the bottom of your rice cooker pot. Use a spatula or spoon to spread the oil thinly and evenly across the entire base. This prevents the potato strands from sticking and ensures the pancake cooks uniformly.

Spread the potato strands, coated with tempura powder, thinly and evenly over the oiled bottom of the rice cooker. Be careful not to pile them too thick; aim to cover the entire base in a single layer.

Select the ‘Reheat’ function on your rice cooker and cook for 9 minutes. If your rice cooker doesn’t have a ‘Reheat’ function, you can use the ‘Cook’ button, and once it finishes, switch to ‘Reheat’ or ‘Warm’ mode for 9 minutes.
Step 7
For an even crispier pancake, after the initial 9-minute cooking cycle, run the ‘Reheat’ function for another 9 minutes. This double reheating process will enhance the texture for a more delightful bite.
Step 8
Carefully remove the cooked potato pancake from the rice cooker and serve on a plate. Your delicious potato pancake is ready! It tastes best served warm. You can enjoy it as is, or with a side of ketchup or soy sauce, according to your preference. 🙂
