Essential Ingredients for Boiled Pork- 1kg Pork Belly (or Pork Jowl)
- 1/2 Onion
- 1 stalk Green Onion
- A piece of Ginger (sliced)
- 5 cloves Garlic

- 2 Star Anise pods
- 3 Tbsp Soy Sauce
- 2 Tbsp Brown Sugar
- 2 Tbsp Mirin (or Cooking Wine)
Garlic Sauce Ingredients- 3 Tbsp Minced Garlic
- 3 Tbsp Honey
- A pinch of Salt (to taste)
- 1 Tbsp Vinegar
- 1/2 cup Soju (approx. 100ml)

- 3 Tbsp Soy Sauce
- 2 Tbsp Brown Sugar
- 2 Tbsp Mirin (or Cooking Wine)

Cooking Instructions
Step 1
Bring 2 liters of water to a rolling boil in a large pot. Once boiling, add the pork belly (or jowl) and 1/2 cup of soju. Blanch for about 1-2 minutes to remove impurities and any unwanted odors.

Remove the blanched pork from the pot and rinse it thoroughly under cold running water. This step helps to ensure the surface of the pork is clean.
Step 3
Return the rinsed pork to the pot. Add 1 liter of water, 3 tablespoons of soy sauce, 2 tablespoons of brown sugar, and 2 tablespoons of mirin. Toss in the aromatics for boiling: the 1/2 onion, 1 green onion stalk, sliced ginger, 5 cloves of garlic, and 2 star anise pods.
Step 4
Cook over high heat with the lid off for about 30 minutes. This allows the flavors to penetrate the meat and evaporates any remaining odors. After 30 minutes, reduce the heat to medium, cover the pot, and continue to simmer for another 20 minutes, or until the pork is tender and cooked through.

Turn off the heat and let the pork rest in the pot, covered, for 10 minutes. This resting period is crucial for allowing the juices to redistribute, resulting in incredibly moist and tender meat.

Once rested, carefully remove the cooked pork from the pot. Let it cool slightly, then slice it into bite-sized pieces, about 0.5 cm thick. Slicing while too hot can cause the meat to fall apart, so a slight cooling is recommended.

Now, let’s prepare the sweet garlic sauce. In a small pan, combine 3 tablespoons of minced garlic and 3 tablespoons of honey. Cook over low heat, stirring constantly, until fragrant. Be careful not to burn the garlic. Once aromatic, remove from heat, stir in a pinch of salt and 1 tablespoon of vinegar to taste. Mix well. Drizzle this delightful garlic sauce over the bossam or serve it on the side to elevate the pork’s flavor with its sweet and zesty notes!
