Stew Ingredients- 1 pack (approx. 250g) soft tofu
- ½ zucchini
- ½ onion
- A little green onion (chopped)
- 10 dried anchovies for broth
- 1 piece (approx. 5x5cm) dried kelp
- About 50g Korean radish (thinly sliced)
Seasoning- 2 Tbsp soybean paste
- ½ Tbsp minced garlic
- 2 Tbsp soybean paste
- ½ Tbsp minced garlic
Cooking Instructions
Step 1
First, prepare 1 pack (approx. 250g) of soft tofu. You can add it to the stew as a whole block or cut it into larger pieces.
Step 2
Let’s make a delicious broth for the stew. In a pot, add about 600ml of water, 10 dried anchovies for broth, 1 piece of kelp, and about 50g of thinly sliced Korean radish. Bring to a boil. Once boiling, remove the kelp after 10 minutes, and remove the anchovies after another 10 minutes of simmering. Leave the radish in the pot to add a refreshing flavor.
Step 3
Slice the zucchini into half-moon shapes and thinly slice the onion. Feel free to use other leftover vegetables you have in your refrigerator (e.g., mushrooms, potatoes). Preparing the ingredients in advance will save you time while cooking.
Step 4
Add the sliced onion to the prepared broth and bring it to a boil. Once the onion becomes slightly translucent, add 2 tablespoons of soybean paste and stir well to dissolve it without lumps. It’s important to properly dissolve the soybean paste.

Next, add the sliced zucchini and continue to simmer. Cook until the zucchini is tender.

Add ½ tablespoon of minced garlic to enhance the aroma.

As the stew simmers, skim off any foam that rises to the surface. This will result in a cleaner and more delicious broth. Use a spoon to carefully remove all the foam.

Now, add the prepared soft tofu, cut into large pieces, and simmer for a little longer. Handle the soft tofu gently to prevent it from breaking apart.
