Main Ingredients

  • Garlic scapes 300g (approx. 2 handfuls)

Cooking Instructions

Step 1

Prepare the fresh garlic scapes. Trim off any tough ends at the base and cut them into bite-sized pieces, about the length of two finger joints. Rinse them thoroughly under running water to remove any dirt or debris.

Step 1

Step 2

Bring a pot of water to a boil. Once boiling, add 1 tablespoon of salt to the water. Salting the water helps to maintain a vibrant green color and a crisp, crunchy texture in the garlic scapes.

Step 2

Step 3

Carefully add the prepared garlic scapes to the boiling water and blanch them for about 1-2 minutes. Be cautious not to overcook, as they can become mushy. The key is to keep them delightfully crisp.

Step 3

Step 4

Immediately after blanching, drain the garlic scapes and rinse them under cold running water to stop the cooking process and cool them down. This step is crucial for preserving their satisfying crunch. Ensure you squeeze out as much water as possible.

Step 4

Step 5

In a large mixing bowl, combine all the seasoning ingredients for the garlic scape salad. Add 1 Tbsp gochujang, 1 Tbsp gochugaru, 2 Tbsp vinegar, 1 tsp salt, 3 Tbsp oligosaccharide, 2 Tbsp plum extract, 1 tsp minced garlic, and 1 Tbsp soy sauce. Whisk them together until well combined and smooth, ensuring no lumps remain.

Step 5

Step 6

Add the drained garlic scapes to the well-mixed seasoning. Gently toss and mix them with your hands or a spoon, ensuring the dressing coats every piece evenly. Finally, drizzle in 1/2 Tbsp of sesame oil and sprinkle 1/2 Tbsp of sesame seeds. Toss lightly one last time to combine. Your delicious spicy and crunchy garlic scape salad is ready! It’s great served immediately or can be stored in the refrigerator for later enjoyment.
