  • Onion, 1/2 (sliced into strips)
  • Carrot, 1/4 (sliced into strips)
  • Cabbage, 2 leaves (shredded)
  • Cheddar cheese, 1 slice (torn into pieces)
  • Mozzarella cheese, 1 cup (approx. 100g)
  • Tortillas, 2 sheets

Spicy Bulgogi Seasoning

  • Gochujang (Korean chili paste), 1.5 Tbsp
  • Chili sauce, 2 Tbsp
  • Sugar, 0.5 Tbsp
  • Curry powder, 1 Tbsp
  • Black pepper, to taste

Cooking Instructions

Wash and prepare the vegetables for the quesadilla. Thinly slice the onion and carrot. Shred the 2 cabbage leaves into similar thickness. The cabbage will be added at the end for a crunchy texture (optional).

Heat a medium-sized pan over medium heat and add a little cooking oil. Add the thinly sliced beef bulgogi, sliced onion, and carrot. Break up the beef so it doesn’t clump together as it cooks.

Once the beef is mostly cooked through and the onions look translucent, add all the spicy bulgogi seasoning ingredients: Gochujang (1.5 Tbsp), chili sauce (2 Tbsp), sugar (0.5 Tbsp), and curry powder (1 Tbsp).

Continue to stir-fry for another 1-2 minutes, ensuring the seasoning is evenly distributed. The curry powder will add a wonderful depth of flavor.
