My husband’s absolute favorite stamina food is oysters! While I’m not a huge fan, fresh, seasonal oysters are wonderfully savory with a subtle sweetness. Today, I’ve made incredibly simple pan-fried oysters using bagged oysters, which are easily available even when they’re not in season. They’re perfect as an appetizer to go with drinks or as a satisfying side dish for meals.

Main Ingredients

  • Bagged oysters, 150g, 2 bags (total 300g)
  • 2 fresh eggs
  • 2 Tbsp pancake mix (or tempura mix)

Seasoning & Others

  • Pinch of salt (for egg wash)
  • Adequate amount of cooking oil (for frying)

Cooking Instructions

I’ve prepared two 150g bags of oysters, commonly found at supermarkets. Using fresh oysters will bring out a deeper flavor. Prepare two eggs to match the amount of oysters.

Truly fresh oysters don’t require much washing; simply rinsing them under cold running water is sufficient. If there are any impurities, drain them on a sieve and rinse lightly.

Crack the two eggs into a bowl. Add a tiny pinch of salt to season the egg wash. For added color and flavor, you can optionally add finely chopped scallions or minced garlic, or a sprinkle of parsley flakes (optional) for visual appeal. Whisk everything together well.

In a clean resealable plastic bag, add 2 tablespoons of pancake mix (or tempura mix). Then, carefully add the drained oysters to the bag.

Hold the bag firmly and shake it gently to coat the oysters evenly with the flour. It’s important to get a thin, even coating of flour on the oysters.

Now, dip the flour-coated oysters into the whisked egg mixture, ensuring they are fully coated with the egg wash. Handle the oysters gently to prevent them from breaking apart.

Heat a pan over medium heat and add a generous amount of cooking oil. Carefully place the egg-coated oysters onto the hot pan, one by one. Fry them until golden brown and crispy on both sides. Be mindful of the heat to prevent burning.
