Easy Sweet Potato and Tuna Tortilla Roll

Ingredients- 1 whole wheat tortilla
- 1 can tuna (drained)
- 1/2 medium sweet potato (cooked and mashed)
- 1 handful cabbage (thinly shredded)
- 1 slice cheddar cheese
- 3 Tbsp Sriracha sauce (or tomato sauce)
- 3 Tbsp mayonnaise
Cooking Instructions
Step 1
Lay one whole wheat tortilla flat on a clean surface. Spread 3 tablespoons of Sriracha sauce evenly across the entire surface. If you prefer less heat, you can reduce the amount of Sriracha or substitute it with tomato sauce for a different flavor profile.
Step 2
Mash half a cooked sweet potato until smooth. In a separate bowl, combine the mashed sweet potato with 3 tablespoons of mayonnaise and mix well. Spread this sweet potato mixture evenly over the tortilla. Next, layer the drained canned tuna, the handful of thinly shredded cabbage, and the slice of cheddar cheese on top of the sweet potato mixture. Don’t overfill, or the tortilla might be difficult to roll.
Step 3
Carefully roll up the tortilla tightly, starting from one edge. You can tuck in the sides slightly before rolling to help keep the filling secure. Roll it firmly to create a compact cylinder. Feel free to customize the filling with other ingredients like kimchi, cooked chicken breast, or avocado according to your taste preferences.
Step 4
Cut the rolled tortilla in half for easier handling. Place the halves in an air fryer basket and cook at 180°C (350°F) for 5 to 10 minutes. The cooking time may vary depending on your air fryer’s wattage and heat. Keep an eye on it, and cook until the tortilla is lightly golden and the cheese is melted and bubbly.
