Spicy & Sweet Stir-Fried Squid and Pork Belly (Osam Bulgogi) – The Golden Recipe
Enjoy a generous and delicious Osam Bulgogi right at home! The fantastic combination of squid and pork, coated in a spicy and sweet sauce, is incredibly addictive and pairs perfectly with rice. This dish is a perfect choice for special occasions or as a delightful everyday meal.
Main Ingredients- 1 squid
- 200g pork neck (or pork belly)
- 1/4 onion
- 1 stalk green onion
- A bit of cabbage
- 3 Korean green chilies or Serrano peppers
Spicy & Sweet Bulgogi Sauce- 2 Tbsp gochujang (Korean chili paste)
- 1.5 Tbsp gochugaru (Korean chili powder)
- 2 Tbsp oligo-dang (isomaltooligosaccharide, adjust sweetness)
- 1 Tbsp maesilcheong (plum extract)
- 1 Tbsp sesame oil
- 1 Tbsp mirin (rice wine)
- 1 Tbsp ginger juice (or a pinch of ginger powder if unavailable)
- 1 Tbsp minced garlic
- 2 Tbsp gochujang (Korean chili paste)
- 1.5 Tbsp gochugaru (Korean chili powder)
- 2 Tbsp oligo-dang (isomaltooligosaccharide, adjust sweetness)
- 1 Tbsp maesilcheong (plum extract)
- 1 Tbsp sesame oil
- 1 Tbsp mirin (rice wine)
- 1 Tbsp ginger juice (or a pinch of ginger powder if unavailable)
- 1 Tbsp minced garlic
Cooking Instructions
Step 1
First, wash and prepare your vegetables. Slice the onion thinly and the green onion diagonally. You can slice the Korean green chilies or leave them whole. Feel free to add other vegetables like mushrooms for extra flavor and texture.
Step 2
Clean and prepare the squid, then cut it into bite-sized, somewhat irregular pieces. Cut the pork neck into similar-sized pieces as the squid.
Step 3
In a large bowl, combine the cut squid and pork. Add all the ingredients for the ‘Spicy & Sweet Bulgogi Sauce’ and mix well by hand until everything is evenly coated. Marinating for at least 1 hour in the refrigerator will allow the flavors to penetrate deeply, resulting in a richer and more intense taste. (If you have time, marinating for 2-3 hours is even better.)
Step 4
Heat a pan over high heat and add a little oil. Add the marinated pork first and stir-fry until it starts to change color. Once the pork is partially cooked, add the marinated squid and continue to stir-fry together over high heat. Maintaining high heat throughout the cooking process is key to keeping the ingredients moist and flavorful.
Step 5
Stir-fry briefly to avoid overcooking the squid. Then, add the prepared cabbage and onion, and stir-fry until they are well combined with the sauce and ingredients. Finally, add the green onion and Korean green chilies (or Serrano peppers) and stir-fry just until they are slightly wilted. Your delicious Osam Bulgogi is now ready! For an extra aromatic touch, drizzle a little sesame oil just before turning off the heat.
