Golden Curry Fried Rice
Flavorful & Easy Curry Fried Rice Recipe
This recipe is lovingly prepared for my husband, who has a late lunch break at 2:30 PM. It’s designed to make his midday meal, and dinner at home, truly special. A perfect choice for him to enjoy at home!
Main Ingredients- 1/2 Onion (finely chopped or julienned)
- 1/2 Carrot (finely chopped or julienned)
- 1/2 stalk Green Onion (chopped or minced)
- 2 Eggs
- 2 bowls Cooked Rice (warm)
Seasoning & Spices- 2 Tbsp Curry Powder (adjust to taste)
- Pinch of Black Pepper (freshly ground is best)
- 1 Pinch of Salt (adjust to taste)
- 2 Tbsp Sesame Oil (adds a nutty aroma)

Cooking Instructions
Step 1
First, prepare the vegetables that will give our curry fried rice its delicious flavor. Peel the onion and carrot, wash them thoroughly, and finely chop them. You can also thinly slice the green onion or mince it according to your preference. Chopping the ingredients small will help them blend well with the rice when stir-fried.
Step 2
Heat a wok or a deep frying pan over medium heat and add enough cooking oil. Add the chopped green onions and stir-fry slowly to create fragrant green onion oil. Continue cooking until the green onions turn a golden hue and release their aroma; this will significantly deepen the flavor of your fried rice.
Step 3
While the green onion oil is infusing, crack the 2 eggs into a bowl and whisk them lightly. Once the green onion oil is fragrant, pour the beaten eggs into the pan around the edges and quickly scramble them with chopsticks or a spatula. As the eggs begin to set, add the chopped onion and carrot you prepared earlier. Stir-fry everything together until the eggs and vegetables are well combined.
Step 4
Once the vegetables are translucent and the carrots are slightly tender, add the 2 bowls of warm cooked rice to the pan. Use a spatula to break up any clumps of rice and stir-fry thoroughly. Now, drizzle in the 2 tablespoons of sesame oil for that nutty aroma and continue to stir-fry until the rice grains are separate and slightly toasted. Ensuring each grain of rice is coated with oil is key.
Step 5
After the rice, vegetables, and eggs are well mixed, it’s time to add the curry flavor. Sprinkle in the 2 tablespoons of curry powder evenly. Add a pinch of salt and a pinch of black pepper. Stir quickly with your spatula to ensure all the seasonings are evenly distributed throughout the rice and vegetables, being careful not to burn the curry powder. Continue stir-frying until all the ingredients are coated and take on a mouthwatering golden curry color.
Step 6
Voila! Your delicious golden curry fried rice is ready. Serve it beautifully in a warm bowl, and your husband will have a hearty and happy lunch. You can also top it with a fried egg or some shredded seaweed for an extra special touch!
