Savory and Sweet Soy Sauce Stir-Fried Dried Shredded Squid Recipe

One of my husband’s absolute favorite side dishes from our Korean home cooking repertoire is stir-fried dried shredded squid. While he enjoys both gochujang (red chili paste) and soy sauce-based versions, today I’ve prepared a delicious soy sauce version that even the kids can enjoy! Its chewy texture and savory-sweet flavor make it a perfect rice companion!

Main Ingredients

  • 100g Dried Shredded Squid (preferably ‘jan’ squid, smaller pieces)
  • 1.5 Tbsp Olive Oil

Soy Sauce Glaze

  • 2 Tbsp Soy Sauce
  • 1 Tbsp Olive Oil
  • 2 Tbsp Oligosaccharide (or corn syrup)
  • 1 tsp Toasted Sesame Seeds

Cooking Instructions

Step 1

Heat 1.5 Tbsp of olive oil in a frying pan over medium-low heat. Add the dried shredded squid, cut into bite-sized pieces (about 5-7cm) with scissors. Cooking over medium-low heat prevents the squid from burning and ensures it becomes tender.

Stir-fry the squid for about 1-2 minutes, just until it slightly curls up and starts to twist. Be careful not to overcook, as it can become tough. Remove the stir-fried squid from the pan and place it on a plate to cool slightly. This step helps the sauce adhere better to the squid later on.

Now, let’s make the soy sauce glaze. In the same pan, add the remaining 1 Tbsp of olive oil, 2 Tbsp of soy sauce, and 2 Tbsp of oligosaccharide over medium heat. Bring the mixture to a simmer. Once bubbles start to form around the edges, stir well with a spatula to dissolve the sugar. Continue to cook for about 1 minute until the sauce slightly thickens, then turn off the heat.

With the heat turned off, add the cooled dried shredded squid back into the pan. Quickly toss and mix with a spatula until the soy sauce glaze is evenly coated on all the squid strands. Finally, sprinkle with 1 tsp of toasted sesame seeds for a nutty aroma. Your delicious soy sauce stir-fried dried shredded squid is ready! It’s delicious served warm, or you can let it cool completely before enjoying.
