This delicious sandwich combines nutritious chicken breast, crisp cabbage, and sweet carrots. I made this with extra care for my husband’s lunchbox. This fresh, light, yet satisfying sandwich will make lunchtime even more enjoyable.
Main Ingredients- 1 chicken breast (approx. 150-200g)
- 1/4 head of cabbage (shredded or finely chopped)
- 1/4 carrot (finely diced)
- 2 slices of sandwich bread
- 1 or more slices of low-sodium cheese
Dressing Ingredients- 5 Tbsp Greek yogurt (plain yogurt also works)

- 1 tsp stevia sweetener (or to taste)

- 1.5 Tbsp lemon juice

Cooking Instructions
Step 1
First, prepare the chicken breast. Boil the chicken breast until cooked through. Once slightly cooled, shred or dice it. Wash the cabbage thoroughly and shred or finely chop it. Finely dice the carrot or slice it about 2-3mm thick. Heat 1 tsp of avocado oil or olive oil in a frying pan and sauté the diced carrot until tender. Once the carrot is softened, combine the shredded chicken breast, chopped cabbage, and sautéed carrot in a bowl. Let the mixture cool down for a bit. Adding the dressing while the ingredients are warm can make the chicken breast dry, so ensure it cools sufficiently.
Step 2
Now, let’s make the delicious dressing! In a clean bowl, add 5 Tbsp of Greek yogurt, 2 Tbsp of mayonnaise, and 1.5 Tbsp of lemon juice for a refreshing tang. For sweetness, add 1 tsp of stevia sweetener and a pinch of black pepper. Whisk all the ingredients together with a whisk or fork until smooth to create a delightful dressing. Feel free to adjust the amount of sweetener or lemon juice to your preference.

Pour the prepared dressing over the cooled chicken breast, cabbage, and carrot mixture in the bowl. Use a spoon or spatula to mix everything thoroughly, ensuring no clumps form. Toss gently until the dressing evenly coats all the ingredients. Your flavorful chicken salad filling is ready!
Step 4
Prepare the bread that will form the base of your sandwich. You’ll need 2 slices of sandwich bread. Place 1 or more slices of low-sodium cheese on top of each slice of bread. Heat the bread with the cheese on it in a microwave, oven, or frying pan for about 2 minutes and 30 seconds until the cheese is melted. Melting the cheese beforehand helps prevent the bread from becoming soggy from the salad’s moisture. If you plan to eat the sandwich immediately, you can skip this step and proceed to the next.
Step 5
Carefully remove the bread with melted cheese and let it cool slightly. If it’s too hot, it might affect the freshness of the salad. Generously spread the prepared chicken salad filling onto one slice of the slightly cooled bread and cheese. Top with the other slice of bread to complete your delicious chicken breast and cabbage sandwich. Press down gently to shape it.
