Healthy and Delicious Enoki Mushroom Pizza Recipe
Introducing Enoki Mushroom Pizza, a guilt-free snack perfect for your diet! This delightful dish combines the freshness of vegetables with the chewy texture of enoki mushrooms, offering a delicious and healthy treat.
Main Ingredients- 1 packet Enoki mushrooms
- Scallions (white or green parts) or Green onions, a small amount
- Yellow bell pepper, a small amount
- Red bell pepper, a small amount
- 3 Eggs
- 1/3 tsp Salt
- 1 Tbsp Mirin (or cooking sake)
Cooking Instructions
Step 1
Crack 3 eggs into a bowl. Add 1/3 tsp of salt and 1 Tbsp of mirin. Whisk gently until smooth. Then, add the pre-chopped vegetables and mix everything together evenly.
Step 2
Finely chop the scallions. (You can use either the white or green parts.) Remove the seeds from the yellow and red bell peppers and dice them finely. If you enjoy a bit of spice, adding some chopped Cheongyang chili pepper would be a great addition. Mix these prepared vegetables into the egg mixture.
Step 3
Trim about 1-2 cm off the bottom of the enoki mushroom cluster. Arrange the mushrooms in a circular pattern to fit your frying pan, laying them snugly on the pan’s surface. Lightly spray the pan with cooking oil before arranging the enoki mushrooms. (While you can cook them immediately, covering the pan for a short while helps them soften slightly, making them easier to handle.)
Step 4
Pour the prepared egg and vegetable mixture evenly over the enoki mushrooms. Cover the pan with a lid and cook slowly over medium-low heat. It’s important to cook gently; high heat can burn the bottom layer before the top is cooked.
Step 5
Once the egg mixture begins to set, gently shake the pan to check if the pizza is loosening from the bottom. Now it’s time to sprinkle your favorite cheese generously over the top. (If you’re making this as a low-calorie snack, you can moderate the amount of cheese. If you want to enjoy a richer flavor, feel free to add plenty of cheese – personally, I find it’s much tastier with a generous amount!)
Step 6
Cover the pan again and wait until the cheese is completely melted. Your delicious Enoki Mushroom Pizza is ready! Isn’t it incredibly simple? Enjoy it warm right away.
