Main Ingredients- 12 fresh plums
- 1/2 cup granulated sugar
- 2 Tbsp lemon juice
Tart Shell Ingredients- 8 whole wheat cookies

Cooking Instructions
Step 1
To ensure cleanliness and a fresh taste, soak the plums in water with a little baking soda and vinegar for about 10 minutes. Then, rinse them thoroughly under running water.
Step 2
After washing, remove the pits from the plums. Slice the plum flesh, including the skin, into bite-sized pieces (about 1-2 cm). Place the sliced plums and 1/2 cup of sugar into a pot and bring to a boil over medium-high heat.
Step 3
Once boiling, reduce the heat to low. Add 2 tablespoons of lemon juice to enhance the tart’s flavor. Let it simmer gently over medium-low heat for about 20 minutes, stirring occasionally with a spatula to prevent sticking. Cook until it reaches a thick jam consistency, then remove from heat.
Step 4
For the tart crust, place the whole wheat cookies into a resealable bag. Use a rolling pin or the bottom of a cup to crush them into fine crumbs. It’s okay if some small chunks remain; they add texture.
Step 5
Pour the melted 60g of unsalted butter over the crushed cookies. Mix well until the cookie crumbs are evenly moistened and form a dough-like consistency. It should hold together when pressed.
Step 6
Cut the top part off the paper cups to create tart mold shapes. Take about 1 tablespoon of the cookie mixture and place it into a paper cup mold. Press it firmly against the bottom and up the sides using the back of a spoon or your fingers to form the tart shell. Ensure it’s thin and even.
Step 7
Place the formed tart shells in the freezer for about 30 minutes until firm. This step helps create a crispy crust without needing an oven.
Step 8
Remove the tart shells from the freezer and generously fill them with the prepared plum jam. Slice fresh plums thinly and arrange them attractively on top to finish. Your beautiful no-bake plum tart is ready! You can enjoy it immediately, or chill it in the refrigerator for a refreshing treat.
