Main Ingredients- Fresh Wild Chives (Dollae) 100-200g
Dollae Jang Seasoning- Soy Sauce 1 cup (200ml)
- Sugar 1 Tbsp (15g)
- Minced Garlic 1 Tbsp (10g)
- Red Pepper Flakes (Gochugaru) 1 Tbsp (10g)
- Plum Extract or Syrup 1 Tbsp (15ml)
- Minced Cheongyang Pepper 1 Tbsp (15g, with seeds)
- Sesame Oil 1 Tbsp (15ml)
- Soy Sauce 1 cup (200ml)
- Sugar 1 Tbsp (15g)
- Minced Garlic 1 Tbsp (10g)
- Red Pepper Flakes (Gochugaru) 1 Tbsp (10g)
- Plum Extract or Syrup 1 Tbsp (15ml)
- Minced Cheongyang Pepper 1 Tbsp (15g, with seeds)

Cooking Instructions
Step 1
Start by preparing the wild chives. Gently wash them under running water, ensuring all soil and dirt are removed, especially around the roots. Trim off the tough, dark ends of the chives as shown in the picture; this step enhances the delicate texture and vibrant aroma of the dish.

Now, let’s create the flavorful base for your Dollae Jang. In a pot, combine 1 cup of soy sauce and 1 Tbsp of sugar. Heat over medium heat, stirring until the sugar is completely dissolved. Once the mixture begins to boil, immediately turn off the heat. To deepen the flavor and cool it quickly, place the pot in the freezer for a short while until completely chilled. This chilling process is key for optimal taste.

Once the soy sauce mixture is thoroughly chilled, gently add the prepared wild chives. Mix them carefully to avoid bruising the chives, preserving their fresh texture. Finally, drizzle in 1 Tbsp of sesame oil for a nutty aroma. Your delicious Dollae Jang is now ready!
