Spicy and Sweet Stir-Fried Squid Recipe

Main Ingredients

  • 2 squids (use fresh ones)
  • 1/4 zucchini (julienned)
  • 1 onion (julienned)
  • 1/4 carrot (julienned)
  • 2 Tbsp minced garlic
  • 1 stalk green onion (chopped)
  • 2 Korean chili peppers (chopped, adjust to your spice preference)

Seasoning

  • 3 Tbsp gochugaru (Korean chili flakes)
  • 10 Tbsp soy sauce
  • 4 Tbsp sugar (adjust to taste)
  • 1 Tbsp gochujang (Korean chili paste)
  • A pinch of black pepper
  • 1/2 cup water (standard paper cup)

Cooking Instructions

First, clean and wash the squid thoroughly. Blanch the whole squid in boiling water for about 1-2 minutes. This step helps to enhance the squid’s chewy texture and removes any impurities, making it taste even better.

Julienne the zucchini and carrot to a similar length as the squid. Also, julienne the onion. Cutting the vegetables into thicker strips will help them retain their crispness when stir-fried.

Once the squid is lightly blanched, let it cool slightly, then cut it into pieces roughly the same length as the julienned vegetables. Be careful not to cut them too small, as they might break apart during cooking.

Heat a pan over medium-low heat and add 2 tablespoons of minced garlic. Stir-fry until fragrant, making sure not to burn the garlic. Cook until a gentle garlic aroma is released.

Once the garlic is fragrant, reduce the heat to low and quickly add 3 Tbsp gochugaru, 10 Tbsp soy sauce, 4 Tbsp sugar, 1 Tbsp gochujang, and a pinch of black pepper to create the seasoning sauce. Mix well to prevent burning.

Pour 1/2 cup of water into the prepared seasoning sauce and bring it to a boil over medium heat, allowing the sauce to dissolve completely. The sauce will start to thicken as it simmers.

When the sauce begins to boil, add the prepared squid and stir-fry quickly to ensure the sauce coats it evenly. Cook for only 1-2 minutes, allowing the squid to absorb the flavor.

Once the squid has absorbed some of the sauce, add all the prepared julienned vegetables (onion, carrot, zucchini). Stir-fry together until the vegetables are well combined with the squid.

When the vegetables are slightly cooked and the squid and sauce are well blended, finally add the chopped green onion and Korean chili peppers. Stir-fry for another moment. This will add a spicy kick and fragrant aroma. Avoid overcooking, as the vegetables might lose their crispness!
