Miso-Mayonnaise Sauce

  • 1 Tbsp Miso Paste (recommending ‘Dadam’ brand)
  • 1 Tbsp Mayonnaise
  • 1 Tbsp Oligosaccharide
  • 1/2 Tbsp Minced Garlic
  • 0.3 Tbsp Gochugaru (Korean Chili Flakes)
  • 1 Korean Green Chili (Cheongyang pepper)
  • 2 Tbsp Water

Soy Sauce Wasabi Dip

  • Soy Sauce to taste

First, prepare the vegetables. Trim the base of the enoki mushrooms and rinse them thoroughly under running water. Peel the carrot and julienne it thinly. Rinse the chives and cut them into manageable lengths. Place all prepared vegetables into a large bowl.

Rinse the bean sprouts and drain them well. Add the bean sprouts to the bowl with the other vegetables. Lightly season with salt and black pepper.
