Spring Cabbage and Clam Tofu Noodle Pasta

While it might be a bit unconventional to call this a ‘pasta’^^;;, I’ve included it in the unique pasta series because it’s a noodle dish. *This recipe was provided as part of the Rural Development Administration’s SNS culinary content in February 2021.*
Main Ingredients- Spring Cabbage: appropriate amount (cut into bite-sized pieces)
- Clams: appropriate amount (cooked and shelled)
- Tofu Noodles: appropriate amount (or any other noodle you prefer)
Seasoning Sauce- Sesame Oil: 3 Tbsp
- Soy Sauce: 1 Tbsp
- Gochugaru (Korean chili powder): 1/2 Tbsp
- Sesame Seeds: 1 Tbsp
- Chopped Green Onion: 1/2 Tbsp
- Minced Garlic: 1/2 Tbsp
- Sesame Oil: 3 Tbsp
- Soy Sauce: 1 Tbsp
- Gochugaru (Korean chili powder): 1/2 Tbsp
- Sesame Seeds: 1 Tbsp
- Chopped Green Onion: 1/2 Tbsp
- Minced Garlic: 1/2 Tbsp
Cooking Instructions
Step 1
Let’s start by making the flavorful seasoning sauce. In a bowl, combine 3 Tbsp of sesame oil, 1 Tbsp of soy sauce, 1/2 Tbsp of gochugaru, 1 Tbsp of sesame seeds, 1/2 Tbsp of chopped green onion, and 1/2 Tbsp of minced garlic. Mix them thoroughly until well combined. Letting the sauce sit for a moment will allow the flavors to meld beautifully.
Step 2
Prepare the clams by cleaning them thoroughly. Boil them in water until their shells open. Once cooked, rinse the clams under cold water and carefully remove the meat from the shells. These delicious clam morsels will add a wonderful depth of flavor to your pasta.
Step 3
Get your tofu noodles ready. The soft texture of tofu noodles pairs wonderfully with this dish, but feel free to use any other type of noodle, like somen or medium-thick noodles, if you prefer. If using fresh noodles, cook them in boiling water according to their package instructions until al dente.
Step 4
Now it’s time to bring all the ingredients together! Place the bite-sized spring cabbage, prepared clam meat, and cooked tofu noodles (or your chosen noodles) into a large mixing bowl. Add the prepared seasoning sauce to your taste and gently toss everything together, ensuring not to clump the ingredients. The crispness of the spring cabbage, the chewiness of the clams, and the softness of the noodles will create a truly unique and delightful pasta dish.
