Main Ingredients- Spam 200g (1 can)

- Mayonnaise 2-3 Tbsp (to taste)

- Sugar 1/2 Tbsp
- Soy Sauce 1 Tbsp
- Black Pepper a pinch

Cooking Instructions
Step 1
Gather your ingredients: 200g of Spam (one can), 2 eggs, half an onion, and 2 Cheongyang peppers. Prepare 1 bowl of warm cooked rice. (You can increase the rice portion to 1.5 bowls if you prefer.)
Step 2
Peel and thinly slice the onion. Dice the Spam into bite-sized cubes. Finely chop the Cheongyang peppers, removing the stems. Adjust the amount of Cheongyang peppers based on your spice preference.
Step 3
To make the scrambled eggs, crack 2 eggs into a bowl and whisk them well. Removing the egg whites (chalazae) will result in a softer scramble. Heat 1 Tbsp of vegetable oil in a non-stick pan over medium heat. Pour in the whisked eggs and stir gently with chopsticks or a fork until cooked through and fluffy.
Step 4
In the same or another non-stick pan, place the cubed Spam without adding oil. Cook until golden brown and slightly crispy on all sides. Crispy Spam adds a wonderful texture to the dish.

Add 1 Tbsp of vegetable oil to a clean pan over medium heat. Add the sliced onions and chopped Cheongyang peppers. Sauté for about 1-2 minutes until the onions become translucent and fragrant.

Add 1 Tbsp of oyster sauce, 1 Tbsp of soy sauce, 1/2 Tbsp of sugar, and a pinch of black pepper to the pan. Stir well and cook for another minute or two until the sauce thickens slightly and coats the vegetables. This creates your savory sauce base.

Prepare the mayonnaise for drizzling. Transfer mayonnaise into a small squeeze bottle, a clean disposable piping bag (cut off a tiny corner of a Ziploc bag), or a small condiment dispenser. This allows for easy and neat application.

If you don’t have a squeeze bottle, no worries! You can use a clean disposable glove, filling it with mayonnaise and snipping off a corner to create a makeshift piping bag. Alternatively, simply spoon the mayonnaise over the rice.
Step 9
Assemble the rice bowl. Place the warm cooked rice in a serving bowl. Top with the prepared scrambled eggs and the sautéed onion and pepper mixture.
Step 10
Arrange the crispy fried Spam generously over the top of the rice and vegetables. The salty Spam is a perfect counterpoint to the other ingredients.
