Rinse them several times under running water and drain them completely in a colander. Be careful not to rinse too vigorously, as this can break the oysters. Next, crack 30 eggs into a large bowl. Remove the chalazae (the white, stringy bits) and whisk them until smooth. While the egg mixture is ready, evenly coat the drained oysters with 300g of all-purpose flour. This flour coating helps the egg batter adhere better and ensures a crispier pancake, rather than a thick one.
