#TunaMushroomPancake #EasyRecipe #Homemade
These delicious pancakes are packed with tuna and fresh mushrooms, offering a wonderfully chewy texture and rich, savory flavor. A hint of spicy chili adds a delightful kick, preventing any greasiness and making them perfect for a satisfying meal or a special side dish. Using rice flour blend for coating will result in an extra crispy pancake.
Main Ingredients- 1 can Tuna (drained)
- 100g Oyster mushrooms
- 1 Korean chili pepper (optional)
- 1/2 Red bell pepper (optional)
Cooking Instructions
Step 1
Rinse the oyster mushrooms thoroughly and pat them dry. Finely chop the mushrooms. For a more pronounced chewy texture, you can also shred the mushrooms lengthwise and cut them in half. Feel free to adjust this step to your preference.
Step 2
Finely chop the Korean chili pepper, removing the stem and seeds. Similarly, finely chop the red bell pepper. If you prefer less heat or are cooking for children, you can omit the Korean chili pepper or reduce its amount.
Step 3
Drain the oil completely from the canned tuna and place it in a mixing bowl. Add the chopped mushrooms, Korean chili pepper, and red bell pepper to the bowl and mix them together.
Step 4
Season the mixture. Add a pinch of salt and a pinch of black pepper, then gently combine the ingredients to ensure they are evenly distributed.
Step 5
Now, let’s make the batter. Add the pancake mix, one egg, and 5 tablespoons of water to the bowl with the tuna and mushroom mixture. Stir everything together until a well-combined batter forms. (Tip: Using a pancake mix containing rice flour will yield a crispier result. If you only have regular pancake mix, adding 1-2 tablespoons of cornstarch will enhance the crispiness.)
Step 6
Heat a lightly oiled pan over medium-low heat. Spoon portions of the batter onto the pan, forming round, flat pancakes. Cook until golden brown and crispy on both sides. These tuna and mushroom pancakes are wonderfully chewy due to the generous amount of mushrooms, and the hint of chili from the peppers adds a delightful contrast, making them a delicious treat.
