Core Ingredients- 1 cup leftover grilled pork belly from BBQ (finely chopped)
- 1/2 cup kimchi or kkakdugi (cubed radish kimchi), finely chopped
- 2 bowls instant rice (e.g., Hetbahn)
- 1 Tbsp sesame oil
- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp ssamjang (Korean savory soybean paste)

Cooking Instructions
Step 1
Heat 1 Tbsp of cooking oil in a wide pan over medium heat. Add the chopped leftover pork belly, finely chopped kimchi (or kkakdugi), sliced garlic, and chopped chili pepper. Stir-fry until the ingredients are well combined. Continue to cook until the garlic is lightly golden and the kimchi is slightly softened.
Step 2
Once the pork belly starts to render its fat and turns a nice golden brown, add 1 Tbsp of gochujang and 2 Tbsp of ssamjang. Reduce the heat to medium-low to prevent burning. Stir continuously, mixing the pastes thoroughly with the other ingredients until everything is well coated. Sauté for about 1-2 minutes until the savory aroma of ssamjang is released.
Step 3
Add the 2 bowls of instant rice to the pan. Using a spatula or spoon, break up any clumps of rice and gently stir-fry, ensuring the sauce evenly coats every grain of rice. Once the rice is well mixed and has a appetizing color, stir in 1 Tbsp of sesame oil and the julienned perilla leaves. Give it a final quick stir for about 30 seconds.
