Main Ingredients- 50g Jaban Gim (seasoned dried laver sheets, or use roasted seasoned seaweed sheets like for kimbap)
- 1/3 Red chili pepper (for a touch of spice and color)
- 3 Scallions (for freshness and a slight crunch)
- 2/3 Tbsp Sesame oil (for nutty aroma)
- 1/2 Tbsp Toasted sesame seeds (for garnish and extra nutty flavor)
Seasoning Ingredients- 4 Tbsp Kelp broth (helps to soften the laver and add umami)
- 1.5 Tbsp Soy sauce (for savory depth)
- 2 tsp Oligodang (corn syrup or other liquid sweetener, for a subtle sweetness)
- 1/2 Tbsp Minced garlic (for a pungent kick)
- 4 Tbsp Kelp broth (helps to soften the laver and add umami)
- 1.5 Tbsp Soy sauce (for savory depth)
- 2 tsp Oligodang (corn syrup or other liquid sweetener, for a subtle sweetness)
- 1/2 Tbsp Minced garlic (for a pungent kick)
Cooking Instructions
Step 1
First, tear the Jaban Gim into bite-sized pieces, about 3-4 cm in size. Tearing them too small can reduce the chewy texture, so aim for a moderate size.
Step 2
Place the torn laver sheets into a wide pan. On very low heat, stir-fry them gently for about 4-5 minutes, making sure they don’t burn. This process removes any fishy smell and enhances their nutty and crispy texture. Fry until they are slightly crisp to the touch.

While the laver is stir-frying, finely chop the red chili pepper (seeds removed) and the scallions into thin slices. These will add color and freshness to the dish.

In a bowl, combine all the seasoning ingredients: kelp broth, soy sauce, oligodang, and minced garlic. Mix well to create the seasoning sauce. Once the sauce is ready, add the stir-fried laver to the bowl. Gently mix and ‘massage’ the laver with your hands so that the seasoning coats it evenly. Be gentle to avoid breaking the laver.
