  • 1 cup Soaked Rice (approx. 150g)
  • 1 King Oyster Mushroom
  • 1/2 Leek (white part mainly)

Seasoning & Broth

  • 2 Tbsp Sesame Oil
  • 1 Tbsp Mirin (Rice Wine)
  • 2 tsp Soy Sauce or Salt (adjust to taste)
  • Pinch of Toasted Sesame Seeds (for garnish)
  • 3 cups Water (600ml)
  • Pinch of Black Pepper

Cooking Instructions

Step 1

First, prepare the vegetables. Thinly slice the leek into rounds about 0.2cm thick. For the king oyster mushroom, separate the stem and cap. Cut the stem into about 4 lengthwise strips, then thinly julienne both the stem and cap pieces into about 0.5cm thick strips. This preparation will add a pleasant chewy texture and rich aroma to the porridge.

Now, let’s clean the abalone. Gently lift the shell of the abalone, then insert a spoon into the gap and apply pressure, pulling towards the front to easily separate the abalone meat from the shell. Once the meat is removed, use a knife to trim off the hard black ‘teeth’ from the underside of the abalone meat.

Carefully detach the dark green entrails (digestive gland) from the underside of the abalone meat with your fingers and discard them. (Note: Some people prefer to keep the entrails for a richer flavor, but this recipe calls for removing them.) Place the prepared abalone meat into the bowl with the soaked rice. Rub the rice with your hands to coat the grains with the abalone’s natural slime. This step helps prevent the rice from clumping and results in a smoother porridge.

Slice the cleaned abalone meat thinly, about 0.2cm thick, for easy eating in the porridge. Alternatively, you can score the abalone slices in a crosshatch pattern to enhance the texture. Avoid slicing it too thickly.

Heat a pot over medium heat for 3 minutes. Add 2 tablespoons of sesame oil. First, add the sliced leeks and sauté for about 1 minute until fragrant, infusing the oil with their aroma.

Once the leeks are fragrant, add the abalone meat (that was with the rice) to the pot. Sauté for about 2-3 minutes until the outer surface of the rice grains becomes translucent. Then, add 1 tablespoon of mirin and stir-fry briefly. Mirin helps to eliminate any fishy smell from the abalone and adds a depth of flavor.

When the rice grains appear translucent, pour in the 3 cups (600ml) of water and bring it to a boil over high heat. Remember to stir continuously while it boils to prevent the rice from sticking to the bottom of the pot. Consistent stirring leads to a perfectly smooth porridge.

Once the porridge starts to boil, skim off any foam or impurities that rise to the surface with a spoon. This will ensure a clean and clear porridge. Then, reduce the heat to medium and let it simmer gently for about 20 minutes, stirring occasionally. When the rice grains are almost fully cooked and tender, add a pinch of black pepper and the julienned king oyster mushrooms.

Continue to simmer for another 5 minutes, or until the mushrooms are cooked. Finally, season the porridge with soy sauce or salt to your taste. It’s best to start with a small amount and adjust as needed. Simmer for an additional 10 minutes until the flavors meld beautifully. Your healthy, homemade abalone porridge is now ready! Serve warm, garnished with a sprinkle of toasted sesame seeds.
