This recipe introduces an easy and simple clear mushroom soup that brings out the natural flavors of the mushrooms, resulting in a broth that is both refreshing and subtly spicy. Enjoy a healthy meal with this comforting and clear mushroom soup.
Main Ingredients- 100g Oyster mushrooms
- 1 pack Enoki mushrooms
- 1/4 stalk Green onion
- 1 Red chili pepper
- 1 Green chili pepper
- 1 tsp Soy sauce for soup
- 1 tsp Salted shrimp
- Pinch of Salt
Broth Ingredients- 2 sheets Dried kelp (5cm x 5cm each)
- 2 Dried shiitake mushrooms
- 1 stalk Green onion
- 50g Radish
- 6 cups Water (approx. 1.2L)

Cooking Instructions
Step 1
First, wash and thinly slice the radish for the broth. Place the sliced radish at the bottom of the pot. Adding radish will enhance the soup’s refreshing taste.

Cut the green onion for the broth into large pieces, about 3-4 segments, and place them on top of the radish. The white parts of the green onion add a refreshing flavor.
Step 3
Rinse the 2 dried shiitake mushrooms clean and add them to the pot. The aroma of shiitake mushrooms will add depth to the broth.

Pour 6 cups (approximately 1.2L) of water into the pot. The amount of broth can be adjusted based on the other ingredients.

Add the 2 sheets of dried kelp (5cm x 5cm each). It’s important to remove the kelp as soon as the water begins to boil to prevent the broth from becoming cloudy.

Cover the pot with a lid and bring it to a boil over high heat. Wait for the water to reach a rolling boil.

Once the water starts boiling vigorously, reduce the heat to medium-low. Cover the pot again and simmer for about 15 minutes to create a deep and refreshing vegetable broth. Remember to remove the kelp during this stage.

Now, prepare the mushrooms. Trim the tough ends of the enoki mushrooms and gently pull them apart into bite-sized pieces by hand. This helps them absorb the seasoning better and taste more delicious.

For the oyster mushrooms, you can tear any thick stems apart or shred them into bite-sized pieces by hand. Prepare them to retain their chewy texture.

For garnish, wash and thinly slice the green onion, green chili, and red chili peppers diagonally. The green chili will add a nice kick, and the red chili will provide a vibrant color.

Once the vegetable broth is ready, remove all the broth ingredients (radish, green onion, shiitake mushrooms) and keep only the clear broth.

Don’t discard the shiitake mushrooms you removed; slice them into enjoyable pieces, about 1cm wide. They will add a satisfying chewy texture to the soup.

Add the sliced shiitake mushrooms back into the clear vegetable broth.

Now, add the prepared oyster mushrooms and enoki mushrooms to the pot. Adding more mushrooms will make the soup richer.

Wait for the soup to come to a rolling boil again. The mushrooms will cook and further enhance the broth’s flavor.

Once the soup is boiling, add the diagonally sliced green onion, green chili, and red chili peppers. Let it simmer for another short while. The chilies will add a spicy note and a fragrant aroma.

Finally, season the soup. Add 1 teaspoon of salted shrimp and 1 teaspoon of soy sauce for soup. The umami from the salted shrimp greatly enhances the broth’s flavor. Adjust with salt if needed, according to your preference. Be careful not to make it too salty.
