It features chewy noodles tossed with a vibrant, savory-sweet, and spicy sauce, often garnished with fresh vegetables and sometimes meat. Main Ingredients- 1 serving of Somyeon noodles (about 100g)
- 1/4 onion, thinly sliced
Seasoning Sauce Ingredients- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili powder)
- 1 Tbsp Sugar (adjust to taste)
- 1 Tbsp Vinegar
- 1 Tbsp Soy Sauce
- 1/2 Tbsp Sesame Oil
- 1 Tbsp Oligodang (corn syrup or rice syrup, for gloss and sweetness)
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili powder)
- 1 Tbsp Sugar (adjust to taste)
- 1 Tbsp Vinegar
- 1 Tbsp Soy Sauce
- 1/2 Tbsp Sesame Oil
- 1 Tbsp Oligodang (corn syrup or rice syrup, for gloss and sweetness)
Cooking Instructions
Step 1
Bring a large pot of water to a rolling boil. Add the somyeon noodles and stir gently with chopsticks to prevent them from sticking together. Cook according to package directions, typically about 3-4 minutes, until al dente.

Drain the cooked noodles and rinse them thoroughly under cold running water to remove excess starch and firm up the texture. Drain them well in a colander; this step is crucial to prevent the bibim guksu from becoming watery.
Step 3
Thinly slice 1/4 of an onion. You can also add other fresh vegetables like cucumber, carrot, or lettuce according to your preference. Slicing the vegetables thinly ensures they mix well with the sauce and are easy to eat.

Now, let’s make the star of the dish: the seasoning sauce! In a bowl, combine 1 Tbsp gochujang, 1 Tbsp gochugaru, 1 Tbsp sugar, 1 Tbsp vinegar, 1 Tbsp soy sauce, and 1 Tbsp oligodang. (If you prefer less sweetness, you can reduce the sugar to 1/2 Tbsp).
Step 5
Add the drained noodles and sliced onion (or other vegetables) to the prepared sauce. Wearing disposable gloves, gently mix everything together with your hands until the sauce is evenly distributed. While chopsticks can work, mixing by hand helps prevent the noodles from breaking and ensures better sauce absorption.

After mixing all the ingredients well, drizzle in 1/2 Tbsp of sesame oil. Gently mix one more time to incorporate the sesame oil, which adds a wonderful aroma and nutty flavor to finish the dish!
