Main Ingredients

  • Petasites stalks (prepared) – 2 handfuls
  • Oyster mushrooms – 1 pack (approx. 200g)
  • Water – 2 cups (400ml)

Seasoning & Aromatics

  • Ground perilla seeds – 3 Tbsp
  • Mushroom powder – 1 tsp (optional, for enhanced mushroom flavor)
  • Soy sauce or salt – to taste
  • Green onion – 1/4 stalk (finely chopped, for garnish)

Cooking Instructions

Step 1

Pour 2 cups (400ml) of water into a pot and bring it to a boil over high heat. This is the base for our flavorful soup.

Step 2

Prepare the mushrooms by trimming off the tough ends and rinsing them lightly under running water. Tear or slice them into bite-sized pieces (2-3 segments). If your petasites stalks are already prepared, rinse them clean and cut them into 3-4cm lengths. If the stalks seem tough, you can briefly blanch them in boiling water before adding to the soup for a more tender texture.

Step 3

Once the water is boiling vigorously, add the prepared petasites stalks and the oyster mushrooms. Reduce the heat to medium and simmer for 5-7 minutes, allowing the savory flavors from the mushrooms and the unique aroma of the petasites to infuse into the broth.

Step 4

When the petasites and mushrooms are tender, stir in the ground perilla seeds (3 Tbsp) and mushroom powder (1 tsp). Whisk gently to ensure the perilla seeds dissolve smoothly without clumping. Season the soup with soy sauce or salt to your preference. This soup is meant to be subtly flavored, so adjust the seasoning carefully.

Step 5
