Main Ingredients- 1 pack Udon noodles

Yakisoba Sauce- 1 Tbsp Sugar
- 1 Tbsp Soy Sauce
- 2 Tbsp Corn Syrup (or Oligosaccharide)

Cooking Instructions
Step 1
First, prepare your vegetables. Coarsely shred the cabbage. Slice the onion into strips. Chop the scallions into large pieces. Cutting them larger adds a pleasant texture and prevents them from becoming too soft when stir-fried.

If using frozen mixed seafood, prepare the amount you wish to use. Rinse it lightly under cold running water to thaw and remove any impurities. Be careful not to rinse for too long, as this can wash away the flavor.

The key to delicious Yakisoba is the sauce! In a bowl, combine 1 Tbsp sugar, 1 Tbsp soy sauce, 2 Tbsp corn syrup, 3 Tbsp oyster sauce, and 1 Tbsp minced garlic. Whisk everything together until well combined to create your sauce base. The oyster sauce adds a wonderful depth of flavor.

Boil the udon noodles in water for about 2 minutes. Avoid overcooking, as they can become mushy when stir-fried. Quickly drain the noodles in a colander and rinse them under cold water to maintain their chewy texture.

Heat about 2 Tbsp of cooking oil in a pan over medium-low heat. Add the chopped scallions and stir-fry until fragrant and lightly golden, infusing the oil with their aroma to create scallion oil. You’ll notice a delicious scent as the scallions begin to brown.

Once the scallion oil is fragrant, add the prepared onion, cabbage, and mixed seafood to the pan. Stir-fry over high heat for 2-3 minutes. This high-heat, quick stir-fry method is key to keeping the vegetables crisp and the seafood tender.

When the vegetables and seafood are partially cooked, pour the prepared Yakisoba sauce into the pan. Add the udon noodles that were rinsed in cold water. Continue to stir-fry for another 2 minutes, ensuring the sauce coats everything evenly. Adjust the heat as needed to prevent burning. Your delicious Yakisoba is almost ready!
