Its crisp texture and fragrant flavor are exceptional, making it a wonderful side dish like kimchi, and it also cuts through the richness of greasy meat dishes like pork belly or bulgogi.   • 100g fresh chives
  • 130g onion

First, wash the chives thoroughly under running water and pat them dry. Cut them into bite-sized pieces, about 4cm long. Peel and thinly julienne the onion. Add 1 tablespoon of minced garlic. (Tip: If you wash the chives for too long, they can become mushy, so it’s best to wash them quickly and drain them well.)

In a large bowl, combine the cut chives, julienned onion, and minced garlic. Add all the seasoning ingredients: 3 tablespoons red pepper flakes, 1.5 tablespoons anchovy sauce, 0.5 tablespoon oligosaccharide, 1 tablespoon plum extract, 1 tablespoon soy sauce for soup, 1 tablespoon toasted sesame seeds, and finally, a drizzle of perilla oil for a nutty aroma.

Now, gently toss everything together until the seasoning is evenly distributed. Be careful not to mix too vigorously, as this can make the chives lose their crispiness. The key is to mix lightly to keep the chives fresh and crunchy. (Tip: Taste and if it’s too bland, add a tiny bit more anchovy sauce or soy sauce for soup.)
