Seasoning & Aromatics

  • 3 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp minced garlic

  • 5 cups rice water (approx. 1L)
  • 1/2 stalk green onion, thinly sliced diagonally
  • 1 Tbsp gochugaru (Korean chili flakes, adjust to taste)

Welcome! Today, I’m sharing a recipe for a crowd-pleasing ‘Pork Neck Gochujang Stew’ that’s sure to become a favorite. It’s wonderfully spicy and has a deep, rich flavor.

First, let’s prepare the pork neck, which adds so much flavor to this stew. Cut 300g of pork neck into bite-sized pieces, about 2 to 3 cm. Cutting them larger allows for a more satisfying chew.

Heat a pot over medium-high heat and add 1 Tbsp of perilla oil. Add the cut pork neck and stir-fry until it begins to brown. Then, add 1 Tbsp of minced garlic and 3 Tbsp of gochujang. Continue to stir-fry over high heat for 2-3 minutes. This initial stir-frying helps to remove any pork odor and deepens the flavor of the gochujang.

Once the pork is nicely browned, pour in 5 cups (approx. 1L) of rice water. Using rice water makes the broth smoother and more savory. If you don’t have rice water, plain water will work, but rice water is highly recommended for best flavor.

Cut the 2 blocks of firm tofu into roughly 2cm cubes. Adding them in larger pieces helps them hold their shape while simmering and maintains their tender texture. Carefully add the cubed tofu to the boiling stew.

As the stew comes to a rolling boil, add the thinly sliced green onion (about 1/2 stalk). Let it simmer for a few more minutes. The fresh flavor of the green onion will meld into the broth, creating a more complex taste.
