  • 1 pack dried pollack (Kodari), pre-cleaned
  • 1 stock bag (containing anchovies, kelp, dried shrimp, etc.)
  • 1/4 Korean radish (Daikon), sliced thinly into 0.5cm pieces
  • 1 green onion, diagonally sliced
  • 2 Tbsp minced garlic
  • 1-2 Korean chili peppers, diagonally sliced (adjust for spice level)
  • 1 red chili pepper, diagonally sliced (for color)

Seasoning

  • 2 Tbsp Korean soy sauce for soup (Guk-ganjang)
  • Salt, to taste
  • 3 Tbsp red pepper flakes (Gochugaru, adjust to preference)

Kodari, also known as semi-dried pollack, is a fantastic choice for stews. It’s known for its mild flavor, less fishy odor compared to fresh pollack, and tender texture. It’s also believed to be beneficial for liver health and can be a great option for those watching their diet. Today, we’ll be transforming this versatile ingredient into a delightful and hearty stew.

The secret to a truly delicious stew lies in a rich and refreshing broth. Using a pre-made stock bag filled with dried anchovies, dried shrimp, dried mussels, and kelp will provide a complex depth of flavor. However, if you don’t have all the ingredients, don’t worry! Simply using dried anchovies and kelp will still yield a wonderfully flavorful broth for your stew.

In a pot, combine cold water with the stock bag and the thinly sliced Korean radish. Bring it to a boil over medium heat, then reduce the heat to low and simmer for about 15-20 minutes. This allows the radish to become tender and translucent, infusing the water with a clear, refreshing flavor. Once the broth is ready, remove and discard the stock bag.
