First, prepare the baby Napa cabbage. While regular Napa cabbage works, baby Napa cabbage offers a sweeter and more tender result. Cut the cabbage in half, and then cut each half in half again, creating four wedges. This ensures the sauce is evenly absorbed and cooks uniformly.

Now, let’s make the delicious sauce. Prepare 1 Korean chili pepper (Cheongyang), 1 red chili pepper, and 1 tablespoon of minced garlic. Remove the seeds from the chili peppers and finely chop them; this will enhance the flavor and texture of your sauce.

In a bowl, combine 2 tablespoons of soy sauce, 5 tablespoons of water, 1/2 tablespoon of oyster sauce, 1 tablespoon of mirin, and 1 tablespoon of vinegar. Mix them well to create the basic sauce.
