Main Ingredients

  • 1 cucumber (approx. 200g)
  • A moderate amount of onion (approx. 50g)
  • 1 Korean chili pepper (Cheongyang chili)

Seasoning

  • 1 Tbsp fish sauce (Kkanari fish sauce recommended, can substitute with anchovy fish sauce or soup soy sauce)
  • 1 Tbsp soy sauce
  • 1/2 Tbsp minced garlic
  • 1.5 Tbsp red pepper flakes (adjust to taste)

Cooking Instructions

Wash the fresh cucumber thoroughly under running water, then trim off both ends. Next, use a vegetable peeler to remove the skin in stripes, leaving some skin on. This technique helps maintain the cucumber’s crispiness and adds visual appeal. (You can also peel it completely or not at all, if preferred.)

Slice the prepared cucumber into bite-sized pieces, about 0.5 cm thick. Avoid slicing it too thinly. Place the sliced cucumbers in a wide bowl, ready to be mixed with the seasoning.

Peel and thinly julienne the onion. Slice the Korean chili pepper diagonally after removing the seeds for an added spicy kick and aroma. (If you prefer less spice, adjust the amount of chili or omit it.) Add the sliced onion and chili pepper to the bowl with the cucumbers.

Now it’s time to add the delicious seasonings. Prepare 1 Tbsp of fish sauce, 1 Tbsp of soy sauce, 1/2 Tbsp of minced garlic, and 1.5 Tbsp of red pepper flakes. (Using soup soy sauce instead of fish sauce is an option, but it might slightly alter the savory depth.)

Pour all the prepared seasonings over the cucumbers and vegetables. Gently mix everything with your hands, ensuring the seasoning coats all the ingredients evenly.
