Main Ingredients- 2 King Oyster Mushrooms (medium-sized)
- 2/3 Cheongyang chili pepper (adjust to your spice preference)
- 5 Walnut halves
Seasoning & Cooking Oil- A little Olive oil
- 1 Tbsp Soy sauce
- 1/2 Tbsp Corn syrup (or oligosaccharide)
- 1 Tbsp Toasted sesame seeds

Cooking Instructions
Step 1
First, wash the king oyster mushrooms thoroughly and pat them dry. Slice them in half lengthwise, then cut them into flat pieces about 0.5 cm thick. Avoid slicing them too thinly, as they might break apart during stir-frying.
Step 2
Finely mince the Cheongyang chili pepper, removing the seeds if you prefer less heat. Chop the walnut halves into small pieces, either by hand or with a knife. It’s nice to have some texture, so don’t crush them too finely.
Step 3
Heat a frying pan with a generous amount of olive oil over medium heat. Once the pan is preheated, add the sliced king oyster mushrooms and stir-fry them over high heat for a short time. As the mushrooms release their moisture, reduce the heat to medium and continue to cook until tender.
Step 4
Once the mushrooms start to turn golden brown, add the chopped walnuts and minced chili pepper. Pour in the soy sauce (1 Tbsp) and corn syrup (1/2 Tbsp). Stir-fry quickly to ensure all ingredients are evenly coated. Be careful not to burn the soy sauce, and continue stir-frying for another 1-2 minutes until the delicious stir-fry is complete.
Step 5
Transfer the finished stir-fried king oyster mushrooms to a serving plate. Finally, sprinkle the toasted sesame seeds (1 Tbsp) over the top for an extra nutty flavor and visual appeal. Enjoy your flavorful dish!
