Main Ingredients- 1 whole pumpkin (approx. 500g)
- 1/2 cup canned corn (drained)
- 1/4 cup dried cranberries
- 1/4 cup mixed nuts (e.g., walnuts, almonds, chopped)
Dressing Ingredients- 1 container plain yogurt (approx. 100g)
- 2-3 Tbsp mayonnaise (adjust to taste)

Cooking Instructions
Step 1
First, wash the pumpkin thoroughly. Remove the stem and cut it in half, then carefully scoop out all the seeds. Place the hollowed pumpkin in a microwave-safe dish or cover it with plastic wrap. Microwave for about 10-15 minutes, or until it’s tender enough to be easily pierced with a fork. The cooking time may vary depending on the size of the pumpkin and your microwave’s power.
Step 2
Once cooked, carefully remove the skin while the pumpkin is still warm. For the salad base, scoop out about 2/3 of the pumpkin flesh into a large bowl and mash it slightly. For the remaining 1/3, cut the pumpkin (with the skin still on) into large, bite-sized cubes (about 1.5cm). Place these cubes in the microwave and cook for another 2-3 minutes. This step ensures that some of the pumpkin remains in chunks for a pleasant textural contrast.
Step 3
To the mashed pumpkin flesh in the bowl, add the entire container of plain yogurt. Using a spoon or spatula, gently mix the yogurt into the pumpkin until well combined. It’s okay if there are still some small lumps of pumpkin; this adds to the texture. This mixture forms the creamy, slightly tangy base for your salad.
Step 4
Now it’s time to add the remaining ingredients to create a flavorful and textured salad. Gently fold in the lightly microwaved pumpkin cubes, the drained canned corn, the dried cranberries, and your prepared mixed nuts. Add the mayonnaise, starting with 2 tablespoons and adding more if you prefer a creamier consistency. Mix everything together carefully until all ingredients are evenly distributed.
