This recipe was born out of a desire for a quick and easy side dish that’s a little bit special! We’re using ‘Chikuwa,’ a Japanese-style fish cake, which offers a clean taste as it’s not deep-fried. The delightful crunch of cheese melting into the fish cake brings pure happiness with every bite. Experience the magic of a delicious dish ready in just 10 minutes!
Main Ingredients- Chikuwa (Japanese fish cake) 4 pieces
- Sliced cheese 4 slices
- Carrot, thinly sliced (about 1/4 carrot)
- Scallion 1 stalk
Seasoning- Cornstarch 1 Tbsp (approx. 15ml)
- Cooking sake 1/2 Tbsp (approx. 7.5ml)

Cooking Instructions
Step 1
First, prepare all your ingredients. Unwrap the chikuwa. Peel the carrot and slice it thinly, then cut into thin matchsticks. Finely chop the scallion.
Step 2
Cut each piece of chikuwa in half lengthwise to create a half-moon shape. Place the cut chikuwa into a plastic bag along with the cooking sake and cornstarch. Gently shake the bag to evenly coat the chikuwa with the starch. This step helps achieve a wonderfully crispy texture when cooked.
Step 3
Preheat a non-stick pan over medium-low heat. Lay one slice of cheese onto the pan, arranging it so it naturally fits the pan’s shape. Place the starch-coated chikuwa pieces attractively over the cheese. Top with another slice of cheese. Repeat this process with the remaining chikuwa. Once all are arranged, cover the pan with a lid and cook for about 2 minutes.
Step 4
After 2 minutes, remove the lid. Increase the heat slightly to between medium-low and medium, and cook uncovered for 1 minute. This helps to evaporate any moisture from the cheese, making it crispier. Check that the cheese has solidified and is set, then carefully flip the fritters and cook the other side for about 2 minutes until golden brown.
Step 5
While the fritters are cooking, place the thinly julienned carrots on microwave-safe plastic wrap and microwave for 1 minute (at 500W). This will slightly soften the carrots while keeping them crisp. Finely chop the scallions.
Step 6
Once cooked, arrange the fish cake and cheese fritters on a plate. Slice them gently, ensuring the inner side faces upwards. Top generously with the lightly microwaved carrot matchsticks and sprinkle with the chopped scallions. Serve alongside a fresh vegetable salad for a satisfying meal or snack!
