  • 1 handful dried anchovies for broth
  • 1 piece radish (about 5cm)
  • 2-3 sheets dried kelp (about 5x5cm)
  • 1 onion
  • 2-3 Tbsp minced green onion
  • 5-6 peeled and cleaned shrimp (optional)

First, pour about 5-6 cups (approx. 1L) of water into a pot. Add the dried anchovies, a chunk of radish cut into large pieces, and the kelp sheets to create the broth. (Remove the kelp after about 5 minutes of boiling to prevent a bitter taste.)

Once the water comes to a boil, let it simmer on medium heat for about 10-15 minutes. This allows the delicious flavors from the anchovies and radish to fully infuse into the broth.

After the broth has simmered, remove and discard all the anchovies, radish, and kelp from the pot. For an even clearer broth, you can strain it through a sieve.
