I’ve made a special and delicious snack using potatoes. It’s perfect for kids’ snacks or when guests visit. Enjoy this delightful dish!
Ingredients- 200g Potatoes
- 20g Carrots
- 3 Tbsp Pancake Mix (Buchim Garu)
- 1 Tsp Salt
- Vegetable Oil, enough for frying
- 1 slice Cheddar Cheese
- 1 Egg
Cooking Instructions
Step 1
Peel the potatoes and julienne them using a mandoline slicer or grater. Soak the julienned potatoes in cold water for a few minutes to remove excess starch. This step helps prevent them from sticking together and makes the pancakes crispier.
Step 2
Finely julienne the carrots. Adding carrots will give the pancakes a lovely color and a subtle sweetness.
Step 3
Drain the potatoes from the soaking water and pat them dry thoroughly. If the potato shreds are too thick, you can julienne them again to be even thinner for a better texture. Removing as much starch as possible ensures a clean, non-clumpy pancake.
Step 4
In a bowl, combine the drained potatoes and julienned carrots. Add 1 teaspoon of salt and 3 tablespoons of pancake mix. Gently mix everything together with chopsticks or a spatula until just combined. Be careful not to overmix, as this can mash the potatoes.
Step 5
Heat a generous amount of vegetable oil in a non-stick pan over medium-low heat. Spread the potato mixture evenly in the pan. Using a smaller pan can help create thicker, more substantial pancakes. Once the edges start to turn golden brown, crack one egg over the mixture and gently spread it using a spoon, allowing it to seep into the potato shreds. This adds extra richness and flavor.
Step 6
Once the bottom is golden brown and cooked through, carefully flip the pancake. Immediately after flipping, while it’s still hot, place the slice of cheddar cheese on top. The cheese will melt beautifully, adding a wonderful savory flavor. Cook for another minute or two until the other side is golden brown and the cheese is melted.
