I’ve been attending lectures related to Korean medicine lately, and I’ve learned that the best foods for our bodies are vegetables. Among them, broccoli, garlic, and walnuts are considered such healthy foods that they should be consumed daily. Because of this, I’ve started buying broccoli, which I rarely bought before, every time I go grocery shopping.
Ingredients- 1/2 head broccoli, cut into bite-sized florets
- 1 handful frozen shrimp, peeled and deveined (about 100-150g)
- 1/2 bell pepper (any color), deseeded and cut into strips or bite-sized pieces
- 1 mushroom (e.g., shiitake, button), sliced
- 1 tablespoon oyster sauce
- A pinch of salt
- A pinch of black pepper
- 1 piece frozen minced garlic (or 1-2 cloves fresh garlic, minced)
- 2 tablespoons perilla seed powder (optional, for nutty flavor)
- Cooking oil (like grapeseed or olive oil), as needed
Cooking Instructions
Step 1
Begin by thoroughly washing all your fresh vegetables. Cut the broccoli into manageable florets. Slice the bell pepper and mushrooms into desired sizes. If using frozen shrimp, thaw them under cold running water and then pat them completely dry with paper towels. This step is crucial for achieving a good sear.
Step 2
Heat 1-2 tablespoons of cooking oil in a skillet or wok over medium heat. Add the prepared broccoli, bell pepper, and mushrooms. Stir-fry for about 2-3 minutes until the vegetables are slightly tender and vibrant in color. Stir-frying the vegetables first helps to retain their crisp texture.
Step 3
Once the vegetables are partially cooked, add the minced garlic (fresh or frozen) to the pan. Sauté for about 30 seconds until fragrant. Then, add the dried shrimp to the pan. Stir-fry until the shrimp turn pink and are cooked through. Shrimp cook very quickly, so a high heat and brief cooking time will keep them delightfully plump and juicy.
Step 4
When the shrimp are almost cooked, season lightly with a pinch of salt and pepper. Pour 1 tablespoon of oyster sauce around the edges of the pan to caramelize slightly before mixing it in. Stir everything together quickly to combine. For an extra layer of nutty flavor, you can sprinkle in 2 tablespoons of perilla seed powder at the very end and toss gently to incorporate.
