Cooking Instructions
Step 1
Let’s begin by making the tart shell. In a bowl, accurately measure and combine 135g of all-purpose flour, 20g of almond flour, and 1g of salt. Gently whisk them together with a whisk or fork.
Step 2
Add the key ingredient for a crispy crust: 90g of cold unsalted butter, cut into cubes. Using a pastry scraper or a knife, finely chop the butter into the dry ingredients.
Step 3
Continue chopping until the butter pieces are about the size of small peas. Work quickly to prevent your hands’ warmth from melting the butter.
Step 4
Now, gradually add the 40g of ice-cold water while mixing the dough. Don’t overmix; just bring the ingredients together until a cohesive ball forms. You shouldn’t see any dry flour.
Step 5
This is what your tart dough should look like – a nicely formed ball.
Step 6
Prepare two sheets of parchment paper. Place one sheet on your work surface and the dough on top. Cover the dough with the second sheet of parchment paper. Using a rolling pin, roll out the dough to an even thickness of about 2-3mm. Carefully lift the rolled dough (still between the parchment paper) and place it into your tart pan. Gently press the dough into the pan and up the sides. To trim the excess dough, place a rolling pin over the top edge of the tart pan and roll it across – the excess will neatly break away. Place the tart shell in the refrigerator to chill for 30 minutes.
Step 7
Remove the chilled dough from the refrigerator and carefully place it into the tart pan. Gently press the dough to fit the contours of the pan. For the edges, place a rolling pin across the top of the pan and roll gently; the excess dough will separate cleanly.
Step 8
Before baking, a crucial step to prevent puffing: prick the bottom of the tart shell all over with a fork. This allows steam to escape, ensuring a flat and evenly baked crust.
Step 9
Bake in a preheated oven at 180°C (350°F) for approximately 25 minutes, or until the crust is golden brown. Once removed from the oven, let the tart shell cool completely. It’s fragile when hot.
Step 10
Now for the filling! In a bowl, combine 150g of softened cream cheese, 120g of plain yogurt, and 25g of sugar. Mix with a hand mixer or whisk until smooth and creamy. Refrigerate the filling until ready to use.
Step 11
Once the tart shell is completely cool, spoon the chilled cream cheese filling into it. Spread the filling evenly with a spatula, creating a smooth surface.
Step 12
Wash the Shine Muscat grapes thoroughly and pat them completely dry with a paper towel. Any excess moisture can make the tart soggy.
Step 13
Arrange the dried grapes decoratively over the cream cheese filling, starting from the center and working your way outwards. Pack them closely for a beautiful presentation.
Step 14
Finally, use a fine-mesh sieve to lightly dust the tart with powdered sugar, resembling a gentle snowfall. This adds a lovely final touch.
Step 15
Your exquisite Shine Muscat tart, boasting a perfect balance of sweetness and tanginess, is now complete! Enjoy this delightful homemade creation.
