A beloved classic Korean side dish loved by all ages! I made stir-fried anchovies again after a while. Today, I added plenty of nuts, which are a perfect pairing with anchovies, to make them even more savory and add a delightful crunch. (Tip: You might think anchovies and nuts don’t pair well, but the nutty flavor balances the anchovies’ slight fishiness, and the nuts’ texture complements the anchovies’ crispiness, creating a delicious harmony.)

  • 7 cloves garlic

Seasoning

  • 3 Tbsp soy sauce
  • 1 Tbsp oligosaccharide
  • 1/3 Tbsp sesame oil
  • 1 Tbsp cooking wine (or soju)
  • 1/2 Tbsp plum extract

First, thinly slice the 7 garlic cloves into slivers. Heat a generous amount of cooking oil in a pan. Add the sliced garlic and slowly stir-fry over medium-low heat to release its aroma. Be careful to manage the heat so the garlic doesn’t burn.

Prepare the medium anchovies. To remove any fishiness and make them crispier when stir-fried, use a microwave to dry out excess moisture. Place the anchovies in a microwave-safe container and microwave for 30 seconds twice, for a total of 1 minute. Stirring them once in between will help them dry more evenly.

Add the dried anchovies to the pan with the fragrant garlic and stir-fry together. It’s important to keep stirring continuously to prevent the anchovies from sticking to the pan. (Tip: Adding nuts like almonds or walnuts will enhance the savoriness and add a pleasant chewiness to your anchovy stir-fry, making it even more delicious. Feel free to add your favorite nuts to taste.)

Once the anchovies are sufficiently stir-fried, add 3 tablespoons of soy sauce and mix well. This step allows the soy sauce to fully penetrate the anchovies.

Finally, add 1 tablespoon of oligosaccharide and 1/3 tablespoon of sesame oil to give it a glossy finish and enhance the flavor. Adding 1/2 tablespoon of plum extract will boost the umami and help mask any remaining fishiness from the anchovies.
