- 4.5 Tbsp Ground black sesame seeds
- 5 Tbsp Mayonnaise
- 3 Tbsp Oligosaccharide (or honey/corn syrup)
- 1.5 Tbsp Vinegar
- 1/2 tsp Salt
Cooking Instructions
Step 1
Thoroughly wash the lotus root under running water, scrubbing the surface with a brush to remove any dirt. Then, peel the skin using a vegetable peeler or a knife. Ensure all soil is removed for a clean preparation.
Step 2
Trim off both ends of the lotus root. Slice it into rounds about 0.5 cm thick. Aim for consistent thickness for even cooking and a pleasant texture.
Step 3
Place the sliced lotus root in a pot and add enough water to cover it completely. Stir in 1 tablespoon of vinegar. Let the lotus root soak for about 10 minutes. This soaking process helps maintain its crispiness and removes any bitterness. While the lotus root is soaking, prepare the delicious black sesame dressing.
Step 4
Grind 4.5 tablespoons of black sesame seeds into a fine powder using a blender or mortar and pestle. In a bowl, combine the ground black sesame seeds with 5 tablespoons of mayonnaise, 3 tablespoons of oligosaccharide, 1.5 tablespoons of vinegar, and 1/2 teaspoon of salt. Whisk everything together until well combined and smooth. Adjust the salt to your taste, as mayonnaise can already be salty.
Step 5
Drain the lotus root from the soaking water. Refill the pot with fresh water, add the lotus root, and bring it to a boil. Once boiling, reduce the heat to medium and simmer for about 5 minutes. Be careful not to overcook, as this can make the lotus root soft and lose its signature crunch.
Step 6
Immediately drain the boiled lotus root using a colander and rinse it thoroughly under cold running water to cool it down quickly. This step is crucial for preserving its crisp texture. Drain well to remove excess water.
Step 7
For the freshest taste and best texture, it’s recommended to toss the salad just before serving. If dressed in advance, the lotus root can release water and become soggy. Place the desired amount of lotus root in a bowl, generously add the prepared black sesame dressing, and gently toss to coat each piece evenly. Ensure all slices are well-covered with the rich dressing.
Step 8
Arrange the delicious Black Sesame Lotus Root Salad attractively on a serving plate. Enjoy your beautifully prepared and flavorful dish! You can also add chopped nuts for extra texture and flavor if desired.
