Main Ingredients- 1/2 large green onion
- 1/2 onion
- 140g thinly sliced pork belly (daepae samgyeopsal)
- 3 frozen cocktail shrimp
Cooking Instructions
Step 1
First, prepare the green onion. Wash the large green onion thoroughly and slice it diagonally. This cut helps release its aromatic oils into the broth and makes it easier to eat.
Step 2
Peel the onion, wash it, and then slice it into thick shreds. The onion will add a natural sweetness to the Jjamppong broth, making it richer and more complex.
Step 3
Get your thinly sliced pork belly ready. Its convenience and rich juices will contribute significantly to the savory depth of the Jjamppong broth.
Step 4
Thaw the frozen cocktail shrimp by rinsing them under cold water or placing them in a bowl of cold water. Once thawed, drain them well. Shrimp add a wonderful touch of ocean freshness to the Jjamppong.
Step 5
Heat a pot over medium heat without adding any oil. Add the thinly sliced pork belly and cook until it’s golden brown and has rendered some of its fat. This initial cooking step helps to remove any gamey odors and builds flavor.
Step 6
Once the pork belly is cooked and has released its fat, add the sliced onion and green onion to the pot. Increase the heat to high and stir-fry. Pour the soy sauce around the edges of the pot; it will sizzle and caramelize slightly, enhancing its aroma and flavor.
Step 7
When the vegetables have softened slightly, about halfway cooked, add the thawed shrimp and gochugaru. Continue to stir-fry over high heat for a short while. It’s important to move quickly here to prevent the vegetables and shrimp from burning.
Step 8
Once the gochugaru has lightly coated all the ingredients, pour in the 500ml of water and the ramen broth mix packet. Bring to a rolling boil over high heat. This simple addition creates a delicious and satisfying Jjamppong broth. Taste and adjust with a little more ramen broth mix if needed.
