Main Ingredients

  • 1 can Tuna (approx. 150g, with oil)
  • 1 bowl warm Rice (210g)
  • 1/4 head well-fermented Kimchi (approx. 150g, finely chopped)
  • 1/2 stalk Green Onion (mainly white parts, finely chopped)
  • 1 Tbsp Cooking Oil

Cooking Instructions

Step 1

First, finely chop the kimchi into bite-sized pieces. If your kimchi is too sour, you can add a little more sugar.

Step 1

Step 2

Finely chop the green onion, focusing on the white parts, to prepare for releasing its aroma.

Step 2

Step 3

Use the tuna can without draining the oil. The tuna oil adds a wonderful savory depth to the fried rice. (If you’re concerned about too much oil, you can use about half of it.)

Step 3

Step 4

Heat 1 Tbsp of cooking oil in a pan over medium heat. Add the chopped green onions and stir-fry slowly over low heat to infuse the oil with their aroma. (This step significantly enhances the fried rice’s flavor.)

Step 4

Step 5

Once the green onion fragrance starts to release, add the chopped kimchi and stir-fry over medium heat until the kimchi softens and becomes slightly translucent.

Step 5

Step 6

After stir-frying the kimchi, add 1 bowl of rice. Break up the rice with your spatula and mix it well with the kimchi, stir-frying until combined.

Step 6

Step 7

Once the rice is loosened, add 1 Tbsp of soy sauce and 1 tsp of sugar. Stir and fry, ensuring the seasoning is evenly distributed throughout the kimchi and rice.

Step 7

Step 8

If you have gochujang, you can add about 1/2 Tbsp here to enhance the spiciness and color. Adjust to your preference.

Step 8

Step 9

Finally, add the entire can of tuna, including its oil, to the pan. Quickly stir-fry everything together so the tuna and its oil blend well with the rice. The tuna oil will contribute a deep umami flavor.

Step 9

Step 10

Sprinkle with a pinch of black pepper for added aroma, and stir-fry once more to ensure all ingredients are well combined.

Step 10

Step 11

Spoon the fried rice into a serving bowl.

Step 11

Step 12

Lightly grease a pan with oil and fry an egg. A sunny-side-up egg with a runny yolk is highly recommended! (Breaking the yolk and mixing it with the fried rice is incredibly delicious.)

Step 12

Step 13

Place the fried egg on top of the prepared fried rice. Optionally, sprinkle with seaweed flakes for extra flavor, and your delicious tuna kimchi fried rice is complete! Enjoy.
