Chewy and Savory Acorn Jelly and Rice Cake Salad

On a morning when I felt like I had no appetite, I rummaged through my fridge and discovered some Tteokguk Tteok (rice cakes for soup) and leftover acorn jelly from yesterday. I decided to combine them into a delightful salad. This dish allows you to savor the softness of acorn jelly and the chewiness of rice cakes simultaneously. Even with simple seasonings, the nutty aroma of sesame oil makes it incredibly addictive. I thought I had no appetite, but I finished the whole plate! It’s perfect as a snack or a light meal. If you prefer a saltier taste, it can also serve as a wonderful side dish.

Main Ingredients

  • 120g Tteokguk Tteok (rice cakes for soup)
  • 160g Acorn Jelly (Dotori Muk)
  • 1 Tbsp Minced Green Onion

Seasoning

  • 1 tsp Soy Sauce
  • 2 tsp Sesame Oil
  • 1 tsp Sesame Seeds

Cooking Instructions

Soak the Tteokguk Tteok in water for about 10-20 minutes until softened. Prepare the acorn jelly by cutting it into bite-sized pieces.

Bring a pot of water to a boil and add the soaked Tteokguk Tteok. Blanch for about 2-3 minutes. Drain the blanched rice cakes thoroughly in a colander to prevent them from sticking together and to ensure they absorb the seasoning well.

Transfer the drained Tteokguk Tteok to a bowl and immediately toss with 1 tsp of sesame oil to prevent sticking. Cut the acorn jelly into pieces roughly the same size as the rice cakes. Toss the acorn jelly with the remaining 1 tsp of sesame oil. Finely mince the green onions.

Add 1 tsp of soy sauce to the seasoned acorn jelly and mix gently. Then, add 1 tsp of sesame seeds, the prepared Tteokguk Tteok, and the minced green onions. Gently toss everything together until well combined.
