First, let’s prepare the vegetables. Thinly slice the onion and cut the green onion diagonally into bite-sized pieces. For the mushrooms, trim off the tough ends of the oyster mushrooms and enoki mushrooms. Then, tear the oyster mushrooms into manageable pieces and separate the enoki mushrooms into strands.

Next, we’ll make a pear juice mixture to tenderize the beef and add a natural sweetness. Peel the pear and grate it finely. Place the grated pear into a cheesecloth or fine-mesh sieve and squeeze out the juice. You should get about 180ml of pear juice. If this step seems too much, you can use store-bought pear juice or a pear beverage.

Now, let’s make the flavorful Bulgogi marinade. In a bowl, combine all the ‘Seasoning’ ingredients: the prepared pear juice, sliced onion, soy sauce, minced garlic, sugar, plum extract, and a pinch of black pepper. Mix everything thoroughly with a spoon until well combined. Ensuring the sugar and garlic are fully dissolved is key.
