Cooking Instructions
Step 1
First, gently rinse the chicken breast under cold water to prepare it.
Step 2
For the thick chicken breast, slice it lengthwise in half, creating a thinner, wider piece, almost like butterflying it. This ensures it cooks evenly and remains tender.
Step 3
Season the flattened chicken breast evenly on both sides with salt and pepper. Let it marinate for about 5 minutes to allow the flavors to penetrate.
Step 4
While the chicken breast is marinating, prepare the cabbage to serve alongside the Chicken Nanban. Use a mandoline or a sharp knife to shred the cabbage as thinly and finely as possible for the best texture.
Step 5
Now, let’s make the delicious tartar sauce! In a bowl, combine 1 cup of finely chopped onion, a desired amount of finely minced carrot, and 1/2 cup of finely chopped pickled radish that has been squeezed dry. For the onion, finely chopping it and then squeezing out excess moisture with paper towels will help prevent the sauce from becoming too watery.
Step 6
Add 1 tablespoon of sugar, a pinch of salt, and 2 tablespoons of vinegar to the bowl. Stir everything together until well combined. The acidity from the vinegar helps to harmonize the flavors of the ingredients.
Step 7
Finally, add 1 cup of mayonnaise for creaminess and mix thoroughly until smooth. If you find the tartar sauce too thin, you can optionally add mashed hard-boiled egg or mashed boiled potato to thicken it and add richness, according to your preference.
Step 8
Next is the sweet and savory soy sauce glaze. In a small bowl, whisk together 1 tablespoon of sugar, 1 tablespoon of soy sauce, 1 tablespoon of vinegar, and 2 tablespoons of water. This sauce will elevate the flavor of the fried chicken.
Step 9
Dredge the marinated chicken breast evenly and thoroughly in all-purpose flour. Lightly shake off any excess flour.
Step 10
After coating with flour, dip the chicken breast into the beaten egg wash (2 eggs) to coat it well. The egg wash will help the final coating become extra crispy.
Step 11
Pour enough oil into a pan for frying and preheat over low heat. Carefully place the chicken breast into the oil and cook initially over low heat to ensure it cooks through. Be careful, as oil that is too hot can burn the outside before the inside is cooked.
Step 12
Once the chicken breast is partially cooked, increase the heat to medium or medium-high and fry until golden brown and crispy. This process creates the perfect texture of Chicken Nanban: crispy on the outside and tender on the inside.
Step 13
Remove the fried chicken breast from the oil and let it cool slightly. Then, dip both sides into the prepared soy sauce glaze, allowing the coating to absorb the sauce until it’s nicely coated. Arrange the chicken on a plate.
Step 14
Finally, generously spoon the prepared tartar sauce over the plated Chicken Nanban to complete this delightful dish! The chicken breast is incredibly tender, making this a special chicken breast recipe that everyone from children to adults will love. Enjoy your delicious meal!
