Main Ingredients- 580g Crown Daisy (Ssukgat)
- 1 Tbsp Coarse Salt (for blanching)
- Pinch of Salt (for seasoning)
Cooking Instructions
Step 1
Thoroughly wash the fresh crown daisies. Place the crown daisies in a bowl and add water, gently swirling to remove any dirt or debris.

After washing, place the crown daisies in a colander to drain excess water. Let them sit for a moment to dry slightly.

Fill a pot with plenty of water for blanching and bring it to a rolling boil with 1 Tbsp of coarse salt. Adding coarse salt helps to maintain the vibrant green color of the crown daisies and removes any unpleasant odor.

Once the water is boiling vigorously, carefully submerge the stem ends of the crown daisies into the water first. Then, gently toss them with chopsticks to ensure even blanching. Depending on the thickness and quantity, blanch for less than 2-3 minutes. Be careful not to over-blanch, as they can become mushy and lose their texture.

Quickly remove the blanched crown daisies from the hot water and place them in a colander. Once slightly cooled, rinse them under cold running water to stop the cooking process and refresh them. This step helps to maintain their crisp texture.
