Pork Ingredients

  • Pork tenderloin 400g
  • Brown rice rice paper or regular rice paper 200g
  • Salt to taste
  • Pepper to taste
  • Mirin (or cooking wine) 1 Tbsp
  • Olive oil 2 Tbsp

Lemon Sauce Ingredients

  • Lemon 3/4
  • Water 400ml
  • Soy sauce 2 Tbsp
  • Sugar 2 Tbsp
  • Vinegar 1 Tbsp
  • Cornstarch slurry (1 Tbsp cornstarch + 1 Tbsp water)

First, cut the pork tenderloin, the star of our dish, into bite-sized pieces, about 2-3 cm. Season the cut pork evenly with salt and pepper. Add 1 tablespoon of mirin (or cooking wine) to eliminate any gamey smell and enhance the flavor. Let it marinate for about 10 minutes.

Now, prepare the rice paper. The key to this dish! Using brown rice rice paper makes it even healthier. Briefly dip the rice paper in warm water until it becomes pliable, but don’t soak it for too long, or it might tear. Place a portion of the marinated pork onto the softened rice paper and roll it up tightly, ensuring it doesn’t come apart. Gently press the edges to seal.

It’s time to use the air fryer! Arrange the prepared rice paper-wrapped pork rolls in the air fryer basket. Drizzle 2 tablespoons of olive oil over the rolls; this will help them achieve a crispier texture. Air fry at 180℃ (350℉) for 15 minutes. After 15 minutes, flip the rolls and continue to cook for another 15 minutes, for a total of 30 minutes. (Cooking time may vary depending on your air fryer model, so adjust as needed.)

Let’s make the refreshing and tangy lemon sauce that will complete our sweet and sour pork! Prepare 3/4 of a lemon. Slice 1/4 of the lemon thinly for garnish, and juice the remaining 1/2 lemon. Using a citrus juicer will make this step easier.

In a saucepan, combine the sliced lemon, lemon juice, 400ml of water, 2 tablespoons of soy sauce, 2 tablespoons of sugar, and 1 tablespoon of vinegar. Bring to a boil over medium heat. Once the sauce starts boiling, reduce the heat to low. Gradually add the prepared cornstarch slurry (1 Tbsp cornstarch mixed with 1 Tbsp water) while stirring constantly until you reach your desired consistency. Make sure to stir well to prevent lumps from forming.
