Easy High-Gluten Flour Scone Recipe for Beginners

Dough Ingredients- 250g High-gluten flour
- 40g Unsalted butter, room temperature (leave out for at least 2 hours)
- 40g Sugar
- 1 Egg, room temperature (leave out for at least 1 hour)
- 125g Cold milk
- Pinch of salt (about a pinch)
- A little extra flour for dusting (for work surface and hands)
- A little milk for brushing the tops
Cooking Instructions
Step 1
In a large bowl, combine the softened butter (left at room temperature for over 2 hours) with the sugar. Using a whisk or spatula, cream them together until smooth and lump-free. It’s important to mix until the sugar granules dissolve into the butter.

Step 2
Add the room-temperature egg (pre-beaten) to the butter-sugar mixture. Gradually pour in the cold milk in 2-3 additions, mixing well to prevent lumps. Be careful not to overmix, as this can make the scones tough; just mix until the ingredients are evenly combined.

Step 3
Sift the high-gluten flour and salt 2-3 times. Sifting the flour will contribute to a softer scone texture. Add the sifted dry ingredients to the bowl and use a spatula to gently mix, just until you no longer see dry flour. Avoid overworking the dough to prevent gluten development, which can lead to tough scones.

Step 4
Generously dust your work surface with extra flour, then transfer the dough onto it. Lightly flour your hands as well, and gently bring the dough together into a rough ball. Handle it minimally; the goal is just to get the flour incorporated.

Step 5
Lightly flatten the dough ball with your palm. Using a bench scraper or knife, divide the dough into 6 equal portions. You can adjust this to 4 or 8 portions depending on your desired scone size.

Step 6
Gently shape each portion into a scone and place them on a baking sheet, leaving some space between them. Brush the tops of the scones with a little milk. Brushing with milk will help the tops achieve a beautiful golden-brown color as they bake.

Step 7
Bake in a preheated oven at 180°C (350°F) for 15 to 20 minutes, or until the scones are a lovely golden brown. Baking times may vary depending on your oven, so keep an eye on them. Once baked, transfer the scones to a wire rack and let them cool completely before enjoying!
